Zumo hops, originating from Segal Ranch in the lower Yakima Valley, are the latest innovation from John Segal, the pioneer behind the famous Cascade hop and the recent favorite, Anchovy hops. Harvested for the first time in 2023, Zumo has quickly garnered attention from prominent breweries like Other Half and Russian River for its unique and intense citrus profile. This hop variety is characterized by its strong lime zest and orange aroma, making it a perfect choice for a variety of beer styles, especially those that benefit from a bright, citrusy kick.

Brewers who have experimented with Zumo highlight its versatility and strong aromatic qualities. Despite having a relatively low alpha acid content (around six or seven), Zumo provides a smooth bitterness that isn't overwhelming, making it suitable for multiple brewing stages, including bittering, whirlpool, and dry hopping. The hop's standout feature is its ability to impart a lime margarita-like flavor, which has made it particularly popular in Mexican lagers and big IPAs.
