HS17701 holds a unique oil composition with up to 62% of total oil being unclassified or not common in hop chemistry. We have discovered that a large percentage of its “other oils” is Beta-Selinene, which is a sesquiterpene, very rarely found in hops, but found in HS17701 that we think contributes to it’s unique flavor/aroma composition.

B-Selinene is a lower volatility compound that carries into finished beer even when added on the hot side. B-Selinene can be found in fruits such as Omija-Cha (Korean Five Flavor Berry) and Yuzu Fruit.

We have measured that HS17701 has significant quantities of bound 3MH (6X - Cascade) lending to additional flavors of passion fruit, gooseberry, and guava when released through mash hop, kettle, or when using a thiolized yeast strain.
